Easy Green Pea Dip With Cream Cheese, Herbs & Lemon

  • 1 kg (2.2 lb) green peas
  • 280 grams (0.5 lb) cream cheese
  • 2 lemon (juice and zest)
  • 2 tablespoon dill
  • 2 tablespoon mint
  • salt and pepper

Instructions
 

  • Cook green peas in a saucepan of salted boiling water for 2-3 minutes until tender. If using canned peas, you can skip this step as they are cooked already. Drain the water and place in a large mixing bowl. Use an ice bath to cool quickly.
  • Blend peas with the lemon juice to slacken the mixture until a smooth green pea puree forms.
  • Add the other ingredients. Blend the pea puree with cream cheese, lemon zest, and fresh herbs and blend until fully incorporated.
  • Season the dip to taste with salt and pepper and more lemon juice if preferred.
