Cook green peas in a saucepan of salted boiling water for 2-3 minutes until tender. If using canned peas, you can skip this step as they are cooked already. Drain the water and place in a large mixing bowl. Use an ice bath to cool quickly.
Blend peas with the lemon juice to slacken the mixture until a smooth green pea puree forms.
Add the other ingredients. Blend the pea puree with cream cheese, lemon zest, and fresh herbs and blend until fully incorporated.
Season the dip to taste with salt and pepper and more lemon juice if preferred.
