Equipment

Ingredients
 

  • 2 kg (4.5 lb) heirloom tomatoes
  • 400 grams (1 lb) Feta cheese
  • 200 grams (7 oz) Honey
  • 2 Garlic cloves
  • 1 tablespoon Chilli flakes
  • 1 teaspoon olive oil
  • 2 tablespoon basil
  • salt and pepper

Instructions
 

  • Make your hot honey first so it has time to cool.
  • Crush the garlic cloves into a paste, and gently fry them in a pan with some olive oil.
  • After a minute or two (taking care that it does not burn), add the chilli flakes and stir through for another 30 seconds until fragrant. 
  • Pour the hot spicy honey into the pan and turn the heat down, allowing the flavours to infuse for 5-10 minutes but do not let it boil. Season with salt and pepper. 
  • Transfer the hot honey into a jug or jar and allow it to cool.
  • Slice your heirloom tomatoes into pieces, or leave some whole for variety. 
  • Place the tomatoes in a salad bowl and crumble the feta over the top. Add the fresh basil leaves and then pour over the hot honey. Serve and enjoy!
