Crush the garlic cloves into a paste, and gently fry them in a pan with some olive oil.
After a minute or two (taking care that it does not burn), add the chilli flakes and stir through for another 30 seconds until fragrant.
Pour the hot spicy honey into the pan and turn the heat down, allowing the flavours to infuse for 5-10 minutes but do not let it boil. Season with salt and pepper.
Transfer the hot honey into a jug or jar and allow it to cool.
Slice your heirloom tomatoes into pieces, or leave some whole for variety.
Place the tomatoes in a salad bowl and crumble the feta over the top. Add the fresh basil leaves and then pour over the hot honey. Serve and enjoy!
