Ingredients
 

  • 300 grams (1.75 cups) red lentils
  • 200 grams (1.5 cups) sweet potato
  • 200 grams (1.5 cups) squash (like butternut, acorn)
  • 400 ml (1.6 cups) coconut milk
  • 400 grams (1.6 cups) tinned tomatoes
  • 250 ml (1 cups) chicken stock (or ude vegetable)
  • 1 banana shallot (or use white onion)
  • 1 bell pepper
  • 3 garlic cloves
  • 1 jalapeno chili
  • 2 inches ginger root
  • 1 teaspoon cumin
  • ½ teaspoon (0.5 teaspoon) garam masala
  • 1 teaspoon chilli flakes
  • ½ teaspoon (0.5 teaspoon) turmeric
  • 4 tablespoon cilantro
  • 1 lime
  • 2 tablespoon cooking oil
  • 200 grams (6.5 cups) spinach

Instructions
 

  • Preheat the oven to 175 degrees Celsius/350 degrees Fahrenheit.
  • Peel and slice the sweet potato and squash into small 1-inch cubes. Place onto an oiled baking tray and roast for 20-30 minutes until browned at the edges.
  • Prepare the other vegetables. Slice the bell pepper and shallot into small pieces, and finely dice the garlic, ginger, and chili.
  • Fry the peppers and onion in oil over medium heat in a large saucepan or casserole until softened and then add the garlic, chili, and ginger and continue to fry for 1-2 minutes.
  • Add the spices and dry fry until fragrant for around a minute. Stir in the lentils and coat them in the spice mix.
  • Pour in the stock, coconut milk, and tomatoes, and bring to a simmer. Cook for 15-20 minutes until the lentils have cooked and broken down to thicken the dahl. Add the roasted sweet potato and squash 5 minutes before the end to heat through.
  • Squeeze in the lime juice and stir through the chopped cilantro just before serving.
