Heat an oven to 160 C / 325 F. Using a sharp knife, score the top of the camembert in a criss-cross pattern and scatter the thyme over the top. Bake for 20 minutes.
Heat the butter in a skillet, toss in the pecans and then drizzle over the honey. Once the pecans are coated, transfer them to an oven tray and bake on the shelf below the cheese for 5 minutes
