For the seafood lovers! Here are all my recipes, ranging from fresh oysters and other shellfish to dishes including my most popular salmon en croute. Try delicate first courses like a seabass carpaccio, or comforting mains like a samphire and seared scallop risotto. I have canapes and amuse bouche recipes for when you're entertaining and elegant first courses to serve before the main event. Some of my favorites are a quick but delicious crab bisque and a tasty smoked fish terrine. I developed many of these recipes whilst working as a private chef on Mersea Island, where the seafood was fresh and plentiful, and I'm so pleased I can now bring all these dishes to you.
