Here's a summer all-rounder. Spicy Lime Avocado Sauce is creamy and flavorful, and made entirely from herbs, spices, and vegetables. It works as a salad dressing, a topping for tacos, a dip, or a sauce for BBQ meats. What's more, it takes about two minutes to make.

Throw everything into a blender, adjust the consistency to taste, and you're done. Who doesn't love a simple recipe?

Ingredient notes
Aim for perfectly ripe avocados, but it doesn't matter if they are slightly underripe, as you are blending them anyway. Then make sure all of your other ingredients are fresh and clean before use. You can adjust the heat levels in this spicy lime avocado sauce by using more or less fresh chili. The variety also matters. I normally use jalapeno peppers, but you can upgrade this to habanero or something spicier if preferred.

How to make creamy lime avocado sauce
- Add the avocado flesh, fresh coriander/cilantro, green chili, garlic, spring onion, and lime juice to a blender.
- Blend until smooth, and adjust the consistency with a splash of water if needed. Season to taste with salt and pepper.
Top tips
- I sometimes like to use smoked salt to add a bit more depth to the lime avocado sauce.
- Including the seeds from the chili peppers will make this spicier; leave them out if you want a milder kick.
- You can add plain yogurt or sour cream to make this into an avocado crema Mexicana.
How to serve
I serve this lime avocado sauce in a multitude of ways. It tastes excellent tossed with plain green salad, as a lime avocado salad dressing. I love it drizzled over my pulled Mexican short ribs in tacos with spicy mango avocado salad and pickled red onions.
If you have leftover lime shells, use them to make my lime ice cream wedges as dessert!
What if I have leftovers?
Cover the surface of the sauce with plastic food wrap and keep refrigerated in an air-tight container. The lime juice will allow it to keep in the fridge for 1-2 days, but it is best enjoyed fresh.
I do not recommend freezing this recipe.

Spicy Lime Avocado Sauce (or Dip, or Dressing!)

Ingredients
- 2 avocados
- 2 cloves garlic
- 2 spring onion /salad onion
- 2 limes (juiced)
- 2 green chillis
- 25 grams (1 oz) fresh coriander/cilantro
- Salt and freshly ground black pepper
Instructions
- Wash the fresh herbs and add them to the blender with the avocado flesh, lime juice, spring onions, garlic, and chilli. De-seed the chili if you want to reduce the heat.
- Blend until smooth, and add water to adjust the consistency. Season to taste with salt and black pepper.
- Store covered in the fridge and enjoy within 1-2 days.
