Preheat the oven to 180/355F (no fan). Cut the croissants into bite size pieces and place them into a mixing bowl. Drizzle over the olive oil and toss so that each piece is coated in oil.
Mince the garlic, dice the rosemary, and finely grate the parmesan cheese. Stir them together in a separate bowl until combined.

- 65 grams (⅔ cup) Parmesan cheese finely grated
