This Easy Parmesan Lollipops recipe is one of the most simple canapes you can make, but looks both fun and elegant. But you can elevate these crispy parmesan cheese crisps on a stick with my toppings and flavor combinations.

Parmesan lollipops are just parmesan crisps malted onto a stick, and they are ready to serve in under 15 minutes. So they're the perfect appetizer for a busy host who likes to keep things simple but still put on a well-presented canape selection.
📖 Ingredients List
You can just use parmesan or take it one step further with some delicious additions. Try some of these herbs and spices and find your favorite.
- Parmesan cheese - For best results, use Parmigiano Reggiano cheese, which is an aged Italian hard cheese made under strict regulations for the most authentic parmesan taste. You can use regular parmesan if you prefer (which is not regulated), or even swap it out for other hard Italian cheeses like Gran Padano or Pecorino.
- Dried chili flakes - spicy red pepper flakes work perfectly against the strong parmesan flavor and add a pop of color. You can also use ground cayenne pepper or paprika.
- Sesame seeds - These add some crunch and flavor, too. try black onion seeds, poppy seeds, or other seeds as an alternative.
- Garlic powder - This will blend into the parmesan discs, so you won't see it, but it adds some depth and garlic taste to the parmesan lollipops.
- Dried herbs - Try any dried herbs you like! Dried mixed herbs are an easy option, or dried rosemary or Thyme. For a really interesting hit of fresh flavor, try dried dill. I don't recommend using fresh herbs.
- Crushed whole peppercorns - I love caccio e pepe, and this is reminiscent of that famous Italian pasta dish. If you use pink peppercorns like I have, you get the most beautiful splash of pink color, too. But cracked black pepper will work just as well.

👩🏼🍳 How to make parmesan lollipops
Preheat the oven to 200C/400F. Grate the cheese into a small bowl and then place little piles in a thin layer on a lined oven tray. Place the tip of the stick in the middle of the disc and add a little more cheese on top. Add your toppings in the center.
Bake parmesan crisps on sticks for 3-4 minutes or until crispy and bubbling. The cooking time is quick, so keep an eye on the melted cheese as it can turn. Wait for them to cool slightly before removing from the tray to a cooling rack using a palette knife.
🌟 Top Tip
I find that around a tablespoon of parmesan is the perfect amount, or a medium-sized pinch of grated parm between your fingers. Remember, the cheese will spread slightly as it melts, so don't put them too close to each other.
👩🏼🍳 Chef's Tips & Serving suggestions
I like to serve parmesan lollipops on pretty canape sticks in tall shooter glasses. They look beautiful this way, and guests can all take one as you pass them around. Cheese lollipops work well as part of a cheese board, too.
🍷 Wine pairing for Parmesan
Vintage Champagne is the perfect pairing for parmesan cheese, or other dry, aged sparkling wine. The nutty notes work so well with the strong cheese and bring out all the flavors. Parmesan is a very versatile cheese though, and can be served with so many other wines. Look for white wines that have been aged on the lees and have biscuity notes, perhaps a Marsanne or a Roussanne. If you prefer red wine, try a Chianti Classico. ❄️ Storage & Freezing
Store Parmesan lollipops in an airtight container in the fridge lined with greaseproof paper for 5-6 days. Let them come back to room temperature before serving.
You can freeze parmesan lollipops, too. To preserve their delicate shape and structure, place them into an airtight container first.
🥣 Equipment
You will need a fine cheese grater, as small curls of parmesan will work best and give you that lace effect in the parmesan crisps.
Bake parmesan lollipops on an oven tray or cookie sheet that doesn't have high sides (this prevents steam from building up around them). Line with parchment paper (baking paper) or a silicone mat.

Yes, parmesan cheese will melt, but it has a lower moisture content than other cheeses, so it melts at a higher temperature than most and needs high heat.
Instead of parmesan, try Gran Padano or Pecorino Romano, which are other hard Italian cheeses with a similar flavor profile. Both work well as a parmesan substitute.

Easy Parmesan Lollipops
Equipment
- 1 Fine cheese grater
- 1 Silicon baking mat or baking parchment paper
Ingredients
- 100 grams Parmesan cheese
Topping ideas
- 1 teaspoon dried chili flakes
- 1 teaspoon sesame seeds
- 1 teaspoon dried herbs
- 1 teaspoon garlic powder
- 1 teaspoon peppercorns
Instructions
- Preheat the oven to 200℃/400℉ and line a baking tray with parchment paper or a silicon baking mat.
- Grate parmesan cheese into a bowl. Use the fine setting.
- Place small handfuls of cheese (around 1 tablespoon) onto the lined tray and put the end of the stick in the middle. Cover with a little more cheese so it melts over it and keeps it in plave.
- Put a small pinch of toppings/flavorings onto the cheese discs.
- Bake the parmesan lollipops for 3-4 minutes, until crispy and bubbling.
- Allow to cool on the tray or remove to a cooling rack with a palette knife after a minute or two.
Notes
- If you are using one topping only, mix it into the grated cheese in the bowl.
- Do not leave the parmesan lollipops unattended in the oven, as they can turn quickly.
- Store in an airtight container in the fridge and use within 5-6 days.
