This Mini Panettone Tiramisu is the perfect recipe using mini panettone Instead of the traditional sponge fingers, we use chocolate chip panettone in this tiramisu recipe dipped in coffee, layered with a creamy mascarpone mixture and grated dark chocolate. A whole panettone works perfectly if you're searching for make ahead dinner party desserts for several people but a mini panettone is an ideal size for two people if you're cooking for date night.
The layers of this Mini Panettone Tiramisu make it pretty to look at so we serve them in glasses, and dust the top with finely grated chocolate rather than cocoa powder because when it comes to chocolate, more is more, right?
You can use chocolate panettone or panettone with dried fruit, whichever appeals to you more. Or whichever kind of panettone you were given at Christmas time and don't know how to use. Does anyone else always get given mini panettone in your stocking and doesn't know what to do with it and it just languishes in the pantry for months? Well, now you have a way to use it. Panettone Tiramisu. Make it a boozy tiramisu if you like, by switching out the coffee for a coffee liqueur like Kahlua.

Ingredients
- Mini panettone
- Mascarpone cheese
- Double cream / heavy whipping cream
- Icing sugar / confectioners sugar
- Coffee
- Dark chocolate

Instructions
Brew some coffee and allow it to cool. You can use instant, or even use cold brew if you have any in the fridge to save time.
To make the tiramisu cream filling, mix the mascarpone cheese with the cream and sift in the sugar until it is smooth and incorporated. You don't need to use an electric whisk, just stir vigorously to avoid lumps of sugar. You want it thick and luxurious.
Slice the mini panettone into six pieces that are all the same width.
Pour the coffee onto a plate and dip one side of each slice of mini panettone into the coffee before placing it in the bottom of a glass. Don't dip both sides as it will become sodden and we don't want that. A quick dip and we're done.
Spoon some of the tiramisu cream filling on top of the panettone and smooth it all over with the back of the spoon to get a flat (ish) layer.
Grate the dark chocolate finely over the top with a cheese grater (use the parmesan setting)
Rinse and repeat! Add another slice of mini panettone, more cream, more chocolate.
Once you have used all your panettone slices, cover the top with the rest of your cream mixture and grate over the rest of your chocolate to cover it completely.
Chill the mini panettone tiramisu in the fridge for an hour for best results to let the flavours infuse and then enjoy!
Hint: Grate your chocolate directly onto the tiramisu layers, as it's so fine that trying to pick it up and transfer it from a chopping board means most of it will instantly melt all over your hands. A nice problem to have, but it does make things a bit sticky.
Plating suggestions
Use short low ball glassware to get the right proportions in the glass, or a small brandy glass as I did. This can also work in a champagne coupe depending on the size.
Wine pairing
A light and sweet sparkling wine pairs well with tiramisu and panettone. Try a prosecco as a festive and fizzy alternative to the traditional dessert wine as it complements the yeast in the panettone.
Variations
Here are a few ways you can change up this recipe to make it suit you
- White chocolate - try white chocolate instead to make this richer and sweeter
- Crunch - add some crunch with crushed walnuts or pistachios on top
- Fruit - add layers of berries to your mini panettone tiramisu to add extra natural sweetness
