Here is what you will need to make this roasted fennel recipe. It takes a few minutes to prep and is cooked all in one oven dish, which makes it a really easy recipe to have on file. I am a big fan of fennel, and this is one of the best salads to make when you want something a bit more hearty, or a winter salad.
- Raw fennel bulb - this white bulb has a mild anise or licorice flavor that becomes very sweet when roasted with a very slight crunchy texture. To prepare fennel bulbs, slice off the base and remove any of the fennel fronds (leaves). The fennel stalks are edible, but they can be a touch thready and tough, so I generally only use the bulb.
- Bell pepper - You can use any color of pepper in this recipe; I normally stick to red peppers. The natural sweetness and slightly caramelized flavor is delicious against the fennel taste.
- Onion - Either white onion or yellow onion will work best, but red onion is fine if it is all you have.
- Spanish chorizo - This Spanish pork sausage is mildly spiced and cured, so it can be eaten raw. However, it tastes delicious when fried as it goes all crispy. You can use Mexican chorizo instead, but check it is thoroughly cooked before consuming it.
- Orange - A fresh and sweet squeeze of orange juice over this warm roasted fennel salad is all the dressing we need, as the components are so flavorful. It lifts everything and gives the dish a really Spanish flavor profile.
- Parsley - This hero of the herb world has a unique property that stimulates all of the taste receptors on your tongue. So things taste better when it's there! Fresh herbs also add a splash of green to the dish.
- Olive Oil - I prefer to use olive oil in this recipe as it fits the flavor profile, but you can use any other oil you prefer.
- Salt and cracked black pepper

Preheat the oven to 175C/350F. Slice the onions, peppers, and fresh fennel root into thin pieces, removing any seeds, skin, or green leaves. Place them into an oven-proof dish and drizzle over the oil.
Roast fennel, peppers, and onions for 20 minutes, then toss and place the cubed chorizo on top. Roast for a further 10 minutes, then squeeze over the orange juice and grate over the zest. Season and serve garnished with fresh parsley.

Sometimes, I prefer to fry the chorizo separately in a pan on the stovetop so that I can drain off the fat.

This warm roasted fennel and orange salad is the perfect accompaniment to fish. Chorizo and white fish taste particularly good together, so I often make this recipe as a great side dish for cod, seabass, or hake. It works well at dinner parties as it's so easy, but guests always love it!
Serve warm or at room temperature; it is delicious either way. To make it a more substantial meal, you could stir in some white beans. If the orange taste is too strong for you, swap it for lemon zest and lemon juice instead.

Store any leftover roasted fennel salad in an airtight container in the fridge. Gently warm through before serving in a saucepan on the stove or in the microwave.
I do not recommend freezing this dish.
